Mango Rasa/Aam Ras (ಮಾವಿನಹಣ್ಣಿನ ಸೀಕರಣೆ ಮಾಡುವ ವಿಧಾನ) Recipe

During Mango season and summer, we tend to eat lots of Mangoes,  ” the king of fruits” and also try some recipes using mangoes. Out of the various recipes, SeekaraNe or simply maavinahaNNina rasa is one that which is easy to make, tasty and one that should be tried out.

ಬೇಸಿಗೆ ಕಾಲ ಬಂತೆಂದರೆ ಎಲ್ಲೆಡೆಯೂ ಹಣ್ಣುಗಳ ರಾಜ ಮಾವಿನಹಣ್ಣಿನದೆ ಕಾರುಬಾರು… ಮಾವಿನಹಣ್ಣು ಉಪಯೋಗಿಸಿ, ಗೊಜ್ಜು, ಮಿಲ್ಕ್ ಶೇಕ್, ಸೀಕರಣೆ ಮಾಡಬಹುದು… ಸೀಕರಣೆ ಮಾಡುವ ವಿಧಾನ ಕೆಳಗಿದೆ..

SeekaraNe ಸೀಕರಣೆ in other words thicker version of Mango milkshake. It is very popular across Karnataka and all over India. It is mouth-watering when served with Poori and delicious when served as  milkshake or juice in Summer.. It is also known as ‘aam ras’ in North India.

Ingredients Needed:

Mangoes ಮಾವಿನಹಣ್ಣು – 3 to 4 ( any variety like alphanso, badam etc ) usually ripen type
Milk ಹಾಲು – 2 big glasses or approximately 1/4 litre of milk
Sugar ಸಕ್ಕರೆ – 10-12 spoonfuls
Cardamom(  elakki ) – 2 to 3 powdered with sugar 1 spoon in mortar pestle or Mixer
Few crushed ice cubes — Can add either while blending or while serving

Method:

[1] Peel the skin of the Mangoes using a small knife or scrapper.

ಮೊದಲಿಗೆ ಮಾವಿನ ಹಣ್ಣಿನ ಸಿಪ್ಪೆ ಹೆರೆದು,ತಿರುಳಿನ ಭಾಗವನ್ನು ಮಾತ್ರ ತೆಗೆದಿಟ್ಟುಕೊಳ್ಳಿ..

[2] Remove the pulp( fruit part) into a mixer jar or blender.

ನಂತರ, ಹಣ್ಣಿನ ತಿರುಳು, ಸಕ್ಕರೆ, ಚಿಟಿಕೆ ಏಲಕ್ಕಿ ಪುಡಿ, ಹಾಲು ಹಾಕಿ ಒಂದೆರಡು ನಿಮಿಷ ಮಿಕ್ಸಿ ಮಾಡಿದರೆ , ಮಾವಿನಹಣ್ಣಿನ ಸೀಕರಣೆ ಸಿದ್ಧವಾಗುತ್ತದೆ… ಇದು ಹಾಗೆಯೇ ಚೆನ್ನಾಗಿರುತ್ತದೆ, ಚಪಾತಿ, ಪೂರಿಯೊಂದಿಗೂ ಹೊಂದುತ್ತದೆ… ಒಮ್ಮೆ ಪ್ರಯತ್ನಿಸಿ ಹೇಗಿತ್ತೆಂದು ತಿಳಿಸಿ… !!!!

[3] To this add sugar, milk and cardamom mix and blend it for 5 minutes.

Serving ideas and variations :-

  • For Milkshake:  Serve in tall glasses as a milkshake by dropping few crushed ice cubes at the top.
  • For specifically seekaraNe:         
    ** Serve with Poori or Chapathi for kids if kids doesnt like with other side dishes.
    ** For guests we can serve Poori with Mango Rasa and any side dish which tastes great.  For this while blending , can add 2 spoons fresh cream ( ಹಾಲಿನ ಕೆನೆ ) which gets formed after milk boils, at our home, we usually serve this way.
