Sandwich is a quick, easy food item to prepare.. When you are having bread at home and just few vegetables and if you are in a hurry, Aloo sandwich is easy to make.. There are varieties of sandwiches that could be made which I would be posting in future…
Sandwich could be eaten as a breakfast or snacks to pack for lunch boxes for kids or for school snack breaks…
Ingredients Needed are ::-
Bread slices – 10 to 12 (Crust part removed)
Ghee – 3 to 4 tbspns
Aalu or aalugaDDe or potatoes – 3 to 4, boiled
Onions – 2 big or 3 smaller ones, chopped finely
Coriander leaves – 2 or 3 springs ( Kotambari soppu)
Ginger pieces – 1 inch chopped finely
Green chillies – 5 to 7 chopped finely
Red chilli powder – 1 tspn
Garam masala powder – 1-2 tspns( Optional)
Eggless Sandwich spread – 5-6 spoons ( Optional)
Stuffing or for masala inside sandwich::
 Boil potatoes well with salt ( for faster cooking and easy mashing), peel and mash them once it cools. Keep this aside.
 Now take a pan, add cooking oil ( 3 to 4 spoons), add mustard, jeera, chopped onion pieces, ginger pieces, green chillies, fry well and turmeric, mashed potato and fry again..
 Now add a tspn of red chilli powder, a spoon of sugar , fry well.. Lastly add salt and coriander leaves..
This forms stuffing.. Allow this to cool/warm.
Note :: If anybody doesnt like/prefer the smell of garam masala powder, can omit it and just add green chillies only and a small spoon of red chilli powder..
 Take a tawa or a flat pan, once it becomes hot, smear little ghee and start roasting breads on both the sides, till they become slightly dark, reddish light brown in color or if prefered dark brown in color..
 Smear ghee on one slice, if you are having just a half spoon of sandwich spread,on that put the aalu masala stuffing prepared using above method, tap it and close it with another slice.. Repeat the same for all the slices..
 You can make any shape you prefer, once it warms..
Triangular or square or even circle, removing or retaining crust is the matter of choice..
Serve it with pudina chutney or ketchup or even could be eaten without any side item..
Note :: Instead of sandwich spread can smear pudina chutney.
